
Ingredients
- 2 medium courgettes, grated
- 1 egg
- 3 tbsp flour
- Salt & pepper
- 1 tsp dried herbs or fresh parsley
- Oil for frying
Herb Yoghurt
- 4 tbsp plain yoghurt
- 1 tsp lemon juice
- Fresh herbs (mint, parsley, chives)
Method
- Squeeze excess water from the grated courgettes.
- Mix with egg, flour, herbs, salt, and pepper.
- Heat oil in a pan and fry spoonfuls until golden.
- Mix yoghurt, lemon, and herbs for the dip.
- Serve warm.
