Simple Organic Carrot & Herb Soup

A warming, beginner‑friendly soup that uses fresh carrots and herbs straight from your garden. Ideal for early harvests or using up a glut.

Ingredients:

  • 500g carrots
  • 1 onion
  • 2 cloves garlic
  • 1 litre vegetable stock
  • Small handful parsley or thyme
  • Salt & pepper

Instructions:

  1. Peel and chop the carrots, onion and garlic.
  2. Gently fry the onion and garlic until soft.
  3. Add carrots and stock. Simmer for 20 minutes until tender.
  4. Blend until smooth.
  5. Stir in chopped herbs and season.
  6. Gardener’s Tip:
  7. Any carrot variety works — even slightly misshapen ones from raised beds.
