
A warming, beginner‑friendly soup that uses fresh carrots and herbs straight from your garden. Ideal for early harvests or using up a glut.
Ingredients:
- 500g carrots
- 1 onion
- 2 cloves garlic
- 1 litre vegetable stock
- Small handful parsley or thyme
- Salt & pepper
Instructions:
- Peel and chop the carrots, onion and garlic.
- Gently fry the onion and garlic until soft.
- Add carrots and stock. Simmer for 20 minutes until tender.
- Blend until smooth.
- Stir in chopped herbs and season.

- Any carrot variety works — even slightly misshapen ones from raised beds.
